With over three decades in global food culture and policy, Bittman is known for his "How to Cook Everything" series and thirty-plus books, including Animal, Vegetable, Junk. A fellow at Yale and on Columbia's Mailman School of Public Health faculty, he also edits The Mark Bittman Project and has received multiple James Beard and IACP Awards.

With degrees in zoology and ecology, he dedicated his career to fostering scientific and environmental literacy. As a professor, he taught field courses, developed programs, and served as Editor-in-Chief of the Encyclopedia of Earth. He now works at Lingnan University.
